Eggsclusive Sandwichessandwiches, american, mixes 4 hard-cooked eggs, chopped 1/2 cup finely chopped celery 1 1/2 teaspoon diced pimiento 1/4 teaspoon salt 1/8 teaspoon pepper 1 tablespoon chopped fresh parsley 1 (optional) 1/3 cup mayonnaise or salad dressing 12 slice buttered toast 2 tomatoes, sliced 8 slice bacon, cooked and drained 4 lettuce leaves Combine eggs, celery, pimiento, salt, pepper, and parsley, if desired; add mayonnaise, and stir well. Spread egg mixture on 4 slices of toast; top each with another slice of toast. Arrange tomato slices, bacon, and lettuce on top of toast. Top with remaining toast. Cut each sandwich into quarters to serve, using wooden picks to hold layers together. Yield: 4 servings.
