Quicker Baked Potato

Try this method for speeding up the potato baking process (for a better texture than those that you microwave). Pre-heat the oven to 400. Place the potato in boiling water for 10 minutes. Bake for 30 minutes. This will cut the cooking time in half.

 

Fruited Rice W/ Mushrooms & Almonds

2 cup basmati rice uncooked
1/2 cup diced dried apples
1/2 cup diced dried apricots
1/2 cup dried dates chopped
1/2 cup raisins
1/2 cup prunes pitted and chopped
1/2 cup slivered almonds
1 cup mushrooms fresh sliced
1 teaspoon salt
1 teaspoon cinnamon ground
1 water as needed for rice

Put water into a large pot and bring to a boil. Add rice, stir, and reduce heat. Add the fruits & salt. cook for 15 minutes on Medium heat. Add remaining ingredients, stir, cover and continue for balance of cooking time. Stir as needed. Note: This dish may be served as a meatless maindish or as a sidedish for poultry, fish, or beef. It is especially good with veal.
