Correro's Red Beans & Ricerice, beans 1 lb dried red beans -- soaked 1 overnight 1 meaty ham bone 2 large onions -- chopped 1 bell pepper -- chopped 2 ribs celery -- chopped 1/4 cup parsley -- chopped 2 cloves garlic -- finely 1 chopped 1 salt and pepper -- to taste 1 pinch sugar 1 bay leaf 2 lb sausage links -- your 1 choice Combine all except parsley and cook until beans are done. Serve over rice. Add parsley just before serving. Variation: Omit ham bone and sausage and use a center slice of ham, cut in small pieces.
