Quicker Baked Potato

Try this method for speeding up the potato baking process (for a better texture than those that you microwave). Pre-heat the oven to 400. Place the potato in boiling water for 10 minutes. Bake for 30 minutes. This will cut the cooking time in half.

One Pot Dinner Recipe

vegetables, beef, casseroles

3 tablespoon vegetable oil
1 small onion -- chopped
1 large egg -- lightly beaten
1 lb ground beef
1/4 cup water
1/2 cup plain bread crumbs or more
1 if required
1 1/2 teaspoon onion powder
1 1/2 teaspoon garlic salt
4 medium potatoes -- scrubbed &
1 sliced
1 bag frozen crinkle cut
1 carrots, 20 oz. size

Heat the oil in a skillet on medium-high heat. Reduce the heat to medium once oil is hot. Place the onion on the bottom of the pan. In a large bowl, mix the egg, beef, water, bread crumbs, onion powder and garlic salt. Press meat into the bottom of the bowl to form a rounded loaf. Invert the bowl to remove and place the loaf on top of the onion. Place the sliced potatoes around the loaf and the carrots atop the potatoes. Sprinkle the entire thing with additional seasonings if desired. Cover and cook for about 1 hour. After 30 minutes turn the meatloaf over and stir the vegetables. Additional water may be added also.
