Quicker Baked Potato

Try this method for speeding up the potato baking process (for a better texture than those that you microwave). Pre-heat the oven to 400. Place the potato in boiling water for 10 minutes. Bake for 30 minutes. This will cut the cooking time in half.

Southwest Burgers

main dish, sauces, beef, tex-mex

1 fresh tomato salsa; *
1 1/2 lb ground beef
4 oz chopped green chiles; **
4 oz monterey jack cheese; diced
1/2 teaspoon pepper
1/4 teaspoon salt

* See Sowest 2 for recipe. ** Use 1 4-oz can of chopped green chiles that have been drained. Prepare Fresh Tomato Salsa and set aside. Mix remaining ingredients. Shape into 6 patties, each about 1/2-inch thick. Set oven control to broil. Place patties on rack in broiler pan. Broil with tops of burgers about 3 inches from the heat until they are done to your taste, 5 to 7 minutes on each side for medium done. Serve with Fresh Tomato Salsa.
