Quicker Baked Potato

Try this method for speeding up the potato baking process (for a better texture than those that you microwave). Pre-heat the oven to 400. Place the potato in boiling water for 10 minutes. Bake for 30 minutes. This will cut the cooking time in half.


Spiced Beef


1 1/4 lb filet of beef
2 tablespoon butter
1 onion, chopped fine
1 clove of garlic, minced
1 teaspoon fresh grated ginger
1/4 cup chopped walnuts
1 teaspoon coriander
1/2 teaspoon cumin
1/4 teaspoon turmeric
1/4 teaspoon red pepper flakes
1 teaspoon brown sugar
1/2 cup brown sauce or gravy
1/3 cup creamed coconut
3/4 cup boiling water

1. Trim any fat from the beef and cut the meat into stips about 2-in. long and 1/4-1/2-in thick. 2. Heat the butter in a large skillet and add the strips of beef. Cook over high heat about 2-3 min., stirring to brown evenly. Remove the meat with a slotted spoon and set aside. 3. Add the onion, garlic and ginger to the skillet and cook, until wilted. Add the walnuts, coriander, cumin, turmeric, red pepper flakes and sugar. Stir to blend. 4. Add the brown sauce or beef gravy. Dissolve the creamed coconut in the boiling water and add to the skillet. Cook gently for 3-4 min., stirring frequently. 5. Return the meat to the skillet and stir to mix with the sauce. Heat through gently.
