Quicker Baked Potato

Try this method for speeding up the potato baking process (for a better texture than those that you microwave). Pre-heat the oven to 400. Place the potato in boiling water for 10 minutes. Bake for 30 minutes. This will cut the cooking time in half.


Swedish Dilled Roast Beef & Red Cabbage Lefse

3/4 cup red cabbage; slice paper thin
1 teaspoon raspberry vinegar
1 teaspoon vegetable oil
1 teaspoon salt
1 teaspoon freshly ground pepper
1 tablespoon prepared horseradish cream
2 lefse
1 tablespoon minced fresh dill
2 large boston lettuce leaves
4 oz roast beef; thinly sliced

1. Toss cabbage with vinegar, oil, salt and pepper. 2. Spread horseradish cream over lefse; sprinkle with small amount of dill. Top with lettuce, roast beef, cabbage and remaining dill. Roll up like a burrito. Source: Chicago Tribune, January 15, 1997
