Quicker Baked Potato

Try this method for speeding up the potato baking process (for a better texture than those that you microwave). Pre-heat the oven to 400. Place the potato in boiling water for 10 minutes. Bake for 30 minutes. This will cut the cooking time in half.

 

Banana Nut Pancakes

1 1/2 cup rice flour
2 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon xanthan gum
1 1/4 cup water
3 tablespoon vegetable oil
2 tablespoon honey
2 egg yolks; beaten
2 large bananas; mashed
1/2 cup chopped walnuts
2 egg whites
1 vegetable oil; for frying

Combine flour, baking powder, salt and xanthan gum in medium bowl. Stir in water, oil, honey, egg yolks, banana and nuts. Beat egg whites in medium bowl until stiff peaks form. Fold into batter. Pour batter onto hot oiled griddle or skillet; cook on both sides until golden brown.
