Banana Orange Oatmealfruits, breakfast 2 cup orange juice 1 banana, chopped 1 teaspoon grated orange rind (opt.) 1 pinch salt 1 1/3 cup quick-cooking rolled oats 1 pinch grated nutmeg In saucepan, bring orange juice, banana, orange rind (if using) and salt to boil; gradually stir in rolled oats. Cook, stirring, for 1 minute; remove from heat. Stir in nutmeg; cover and let stand for 5 minutes. Makes 4 servings. Variation: Cinnamon Apple Oatmeal: Substitute 3 cups apple juice for orange juice, rind and banana. Substitute 1/4 tsp. cinnamon for nutmeg. Serve sprinkled with raisins, if desired.
