Quicker Baked Potato

Try this method for speeding up the potato baking process (for a better texture than those that you microwave). Pre-heat the oven to 400. Place the potato in boiling water for 10 minutes. Bake for 30 minutes. This will cut the cooking time in half.

 

Stir-fried Pineapple Chicken

1/2 lb boned chicken
1 cornstarch
1 lb pineapple tidbits (drained)
1 sesame oil (optional)
1 teaspoon brandy
1 peanut oil
1 teaspoon soy sauce
1 chicken broth or stock
1 teaspoon sugar

Cut chicken into thin slices. Heat several tablespoons of oil in bottom of wok. Add pineapple, several dashes of salt and enough broth to cover. Cook for 1 minute. Add chicken and cornstarch, diluted in water, to make a thick paste, sesame oil, brandy, soy sauce and sugar. Cook for 2 to 3 minutes, stirring constantly. Serve. FROM: Chinese Wok
