Okra Pilauvegetables, creole 2 cup okra,thinly sliced,rinsed 3 bacon slices,diced 1 cup green bell pepper,chopped 1 cup onions,chopped 1 cup rice,uncooked 2 cup chicken broth 2 teaspoon salt 1 can tomatoes,drain/chop(16oz) 1. In large skillet, saute okra and bacon until lightly browned. 2. Add bell peppers and onions; continue cooking until vegetables are crisp-tender. 3. Add rice, chicken broth and salt. 4. Bring to a boil, stir once, cover, reduce heat and simmer 15 minutes, or until rice is tender and liquid is absorbed. 5. Add tomatoes; heat, and fluff with a fork.
