Quicker Baked Potato

Try this method for speeding up the potato baking process (for a better texture than those that you microwave). Pre-heat the oven to 400. Place the potato in boiling water for 10 minutes. Bake for 30 minutes. This will cut the cooking time in half.

Crockpot Ratatouille

2 large onions, sliced
1 large eggplant, sliced
4 small zucchini, sliced
2 garlic clove; minced
2 bell pepper, green; seeded & cut in thin stri
6 large tomato; cut in 1/2 wedges
1 teaspoon basil
2 teaspoon salt
1/4 teaspoon pepper
2 tablespoon parsley; chopped
1/4 cup olive oil

Layer half the vegetables in the crock pot in the following order: onion, eggplant, zucchini, garlic, green peppers, tomatoes. Repeat. Sprinkle basil, salt, pepper, and parsley over top. Drizzle with olive oil. Cover and cook on low 7-9 hours. Cool and chop coarsely. per Ellen Cleary Posted By (Sam Waring) On or
