Quicker Baked Potato

Try this method for speeding up the potato baking process (for a better texture than those that you microwave). Pre-heat the oven to 400. Place the potato in boiling water for 10 minutes. Bake for 30 minutes. This will cut the cooking time in half.

Almond-pear Coffee Cake

cakes, desserts, fruits, breakfast

1/2 cup unsifted flour
1/2 cup finely chopped almonds
1/4 cup packed brown sugar
1/4 teaspoon ground nutmeg
1/3 cup mayonnaise
1/4 teaspoon almond extract
1 each 17oz pound cake mix
1/3 cup milk
2 large eggs
2 lb pears; cored - peeled and thinly

Grease 13x9x2 inch baking pan. In medium bowl stir together first 4 ingredients. Stir in mayonnaise and extract until mixture resembles coarse crumbs; set aside. In large bowl with mixer at low speed beat cake mix, milk and eggs just until blended. Increase speed to medium; beat 2 minutes. Spread in prepared pan. Arrange pears in one layer on top of batter; sprinkle with mayonnaise mixture. Bake in 325 degree oven 50 to 60 minutes or until cake tester inserted in center comes out clean. Cool slightly in pan. Serve warm. Great with sliced peaches too. From 'That Amazing Ingredient: Mayonnaise!' Cookbook Best Foods / Hellmans Mayonnaise (1979)
