Sausage Plaitenglish 8 oz shortcrust pastry 1 filling 8 oz sausage meat 2 single tomatoes 1 small onion 2 oz mushrooms 1 pinch mixed herbs 1 salt and pepper 1 single egg, beaten Set ovcn to 400/F or mark 6. Chop thee tomatoes, onion and mushrooms and mix with the sausage meat and the herbs. Roll out the pastry on a floured surface to a rectangle 12 inches by 9 inches and place on a greased backing tray. Arrange the filling down the centure of the pastry. Cut the pastry into 1/2 inch strps at an angle, either side of the filling. Fold tlle pastry strips, alternately, over' the mixture to look like a plait. Brush with beaten egg and bake for 30-35 minutes. Serves 4.
