Greek Onion Soupappetizers, greek, vegetarian, soups/stews, ethnic 2 tablespoon olive oil 2 each onions, chopped 2 each garlic cloves, chopped 1 each potato, chopped 1 teaspoon salt 1 pinch ground black pepper 1 a few bay leaves 1/2 teaspoon marjoram 1 cup yogurt 2 pint stock 1 tablespoon chopped parsley Heat oil in a pot & gently fry the onion for 2 minutes. Add garlic, potato & seasonings. Stir together. Add yogurt & mix well. Pour in stock. Bring to a boil, cover & simmer for 20 minutes. Garnish with chopped parsley.
