Greek Stuffed Tomatoesvegetables, greek 2 tablespoon olive oil 1 small onion, diced 2 cup spinach, chopped and cooked 2 teaspoon dried basil 1/2 cup bread crumbs 1 egg 1/2 lb feta cheese, crumbled 1 salt, to taste 1 pepper, to taste 6 tomatoes, firm and with 1 insides scooped out In a saucepan, heat oil and saute onion until translucent. In a bowl, combine the sauteed onions with all remaining ingredients except tomatoes. Stuff filling into tomatoes. Bake in a preheated, 350 degree F oven for 15 minutes. Make 4 to 6 servings.
