Quicker Baked Potato

Try this method for speeding up the potato baking process (for a better texture than those that you microwave). Pre-heat the oven to 400. Place the potato in boiling water for 10 minutes. Bake for 30 minutes. This will cut the cooking time in half.

Coconut Easter Eggs

3 oz cream cheese, softened
1/2 teaspoon vanilla
1 lb confectioners sugar
1/4 cup flaked coconut
1 dash salt
1 lb chocolate coating

Combine cream cheese and vanilla in bowl. Gradually add confectioners sugar, coconut and salt. Mix to consistency that can be easily handled, adding more confectioners sugar if necessary. Form candy into eggs; let set approximately 1 hour. Dip into compound coating; let set until firm. From Sweet Thing @5211 March 1994
