Roast Quartered Chickenappetizers, main dish, poultry, kosher 1 roasting chicken, quartered 1 large diced onion 1 garlic, minced 1 salt, pepper, paprika Season each quarter well and place in roasting pan over diced onions and garlic. Add about 1/2 cup of water and cover. Roast at 350 F. until almost tender. Remove cover, lower heat to 325 F. and bake uncovered, turning once until each piece is golden brown.
