Quicker Baked Potato

Try this method for speeding up the potato baking process (for a better texture than those that you microwave). Pre-heat the oven to 400. Place the potato in boiling water for 10 minutes. Bake for 30 minutes. This will cut the cooking time in half.

 

Black Bean Tortilla Melts

1 can (15 oz.) black beans,
1 rinsed & drained
1/2 teaspoon chili powder
6 (6 in.) corn tortillas
1/4 cup minced cilantro
1 lime cut into 6 wedges
1/4 cup (3 oz.) shredded
1 cheddar
1 fresh salsa
2 can (4 oz.) chopped green
1 chiles undrained

Mash Beans; Add Chili Powder Stirring Well. Spread About 3 T. Of Bean Mixture On Each Tortilla. Sprinkle With Fresh Cilantro & Squeeze 1 Lime Wedge Over Each. Top Each Tortilla With 2 T.
