Quicker Baked Potato

Try this method for speeding up the potato baking process (for a better texture than those that you microwave). Pre-heat the oven to 400. Place the potato in boiling water for 10 minutes. Bake for 30 minutes. This will cut the cooking time in half.

Fruit Smoked Pork Chops

4 pork chops -- smoked
1/2 teaspoon sage -- ground
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup raisins -- seedless
1 small apple, tart -- cored &
1 sliced
1 tablespoon flour -- all-purpose
1/4 cup fruit juice -- or water
1 1/2 teaspoon vinegar -- cider
2 tablespoon sugar, brown -- firmly

Grill chops over hot coals 10 minutes. Place on heavy-duty aluminum foil; sprinkle with sage, satl, and pepper. Top with raisins and apple; set aside. Combine flour and water; cook over low heat, stirring constantly, until slightly thickened. Stir in vinegar and brown sugar; pour over chops. Seal securely. Return to grill for 30 minutes or until tender. SOURCE: Southern Living Magazine, September 1977. Typos by Nancy Coleman. Recipe By : From: Date:
