Quicker Baked Potato

Try this method for speeding up the potato baking process (for a better texture than those that you microwave). Pre-heat the oven to 400. Place the potato in boiling water for 10 minutes. Bake for 30 minutes. This will cut the cooking time in half.


Pork Loin With Mustard Seed Crust


8 oz yogurt, plain nonfat
2 garlic clove; minced
1 1/2 teaspoon kosher salt
1/2 teaspoon pepper
3 lb boneless pork loin
2 tablespoon sugar
2 tablespoon mustard seed

Combine the yogurt, garlic, 1 tsp of salt and pepper in a small bowl. Place the pork loin in a shallow baking dish and coat well with the yogurt mixture. Cover with plastic wrap and refrigerate for several hours or overnight. Let the pork stand at room temperature for 1 hour before roasting. Preheat the oven for 350 F. Wipe the marinade off of the pork and place it in a roasting pan. Combine the sugar and mustard seeds and coat the pork with the mixture. Sprinkle with the remaining 1/2 tsp salt. Roast for 1 hour 20 mins. Raise the oven temperature to 450 F and continue roasting until the pork reaches 150 to 160 F on a meat thermometer and the top is crisp, about 10 mins longer.
