Quicker Baked Potato

Try this method for speeding up the potato baking process (for a better texture than those that you microwave). Pre-heat the oven to 400. Place the potato in boiling water for 10 minutes. Bake for 30 minutes. This will cut the cooking time in half.

 

Pork Tenderloin With Orange Lemon Glaze

1 1/2 lb tenderloin of pork
1 salt and pepper to taste
1 garlic powder
----ORANGE/LEMON GLAZE----
1/2 cup orange juice
2 teaspoon lemon juice
1/4 cup port wine
1/2 cup orange marmalade

Sprinkle tenderloin with salt, pepper, and garlic powder to taste. Place the tenderloin in a shallow roasting pan and insert a meat thermometer in the thickest part of the meat. Roast in a preheated 350 degree F. oven for about 30 minutes. Now baste with Orange Lemon Glaze every 15 minutes until thermometer registers 170 degrees F. and roast is nicely glazed, about 1/2 hour longer. Yield: 1 1/4 c.
