Quicker Baked Potato

Try this method for speeding up the potato baking process (for a better texture than those that you microwave). Pre-heat the oven to 400. Place the potato in boiling water for 10 minutes. Bake for 30 minutes. This will cut the cooking time in half.

Butterscotch Meringue

1 cup brown sugar
2 eggs (separated)
2 cup milk
2 tablespoon flour, plain
2 tablespoon butter
1/4 cup sugar, white

Mix flour and brown sugar, adding beaten egg yolks and milk gradually. Put on to boil and thicken, stir constantly. Take off heat. Add butter and mix well. Pour into buttered pie dish. Beat egg whites with white sugar until meringue consistency and pile on top. Bake in a pre-heated oven at 340 degrees F. until meringue is nicely brown. NOTES: * Butterscotch pudding with a meringue top -- A delicious dessert for the sugar addict. It goes well with apricot chicken.
