White Bean & Herb Sandwichsandwiches 1 cup white beans -- drained 2 tablespoon fresh parsley -- chopped 1 tablespoon chives -- snipped 1 teaspoon dill 1/4 teaspoon salt 1/8 teaspoon pepper 2 oz nonfat cream cheese 1 cucumber -- peeled and 1 sliced 1 lettuce -- or sprouts 1 bread Combine first 8 ingredients in a food processor and process until smooth. Taste for seasonings and add more herbs or lemon juice if necessary. Spread mixture on 4 slices of bread. Cover remaining 4 slices with layer of slightly overlapping cucumber slices.
