Quicker Baked Potato

Try this method for speeding up the potato baking process (for a better texture than those that you microwave). Pre-heat the oven to 400. Place the potato in boiling water for 10 minutes. Bake for 30 minutes. This will cut the cooking time in half.


Bacon-broiled Scallops


24 large sea scallops, 1 1/4 lbs
12 slice bacon
1 salt
1 seasoned pepper
1 lemon wedges

Rinse scallops with running cold water to remove sand from crevices. Pat dry. Preheat broiler. Cut each bacon slice crosswise in half, wrap each half around a scallop. Secure with toothpick. Sprinkle lightly with salt and seasoned pepper. Broil 8-10 mins, turning frequently so bacon will brown evenly, until scallops turn opaque through. Remove toothpicks.
