Quicker Baked Potato

Try this method for speeding up the potato baking process (for a better texture than those that you microwave). Pre-heat the oven to 400. Place the potato in boiling water for 10 minutes. Bake for 30 minutes. This will cut the cooking time in half.

 

Fresh Salsa


low-cal, sauces, low-fat, tex-mex

1 cup tomatoes, plum; diced & seeded
2 tablespoon cilantro, fresh; chopped
1 tablespoon onions, red; minced
1 tablespoon juice, lime; fresh
1 jalapeno chile; seeded & minced
1/8 teaspoon to 1/4 tsp salt
----PER 1/4 CUP SERVING----
10 single *cals
1 *gm protein
3 single *gm carbo
106 single *mg sodium

combine all ingredients in small bowl. Makes about 1 cup. Total Prep Time: 10 minutes.
