Fresh Cucumber Picklesauces, thai 4 tablespoon rice vinegar 2 teaspoon sugar 1/2 teaspoon salt 1 oz cucumber; finely chopped 2 small shallots; finely chopped 1 small carrot; finely chopped 1 small red or green chili - finely chopped Mix all ingredients in a small bowl, stirring well until thoroughly mixed and serve.
